What's for Lunch?

Trying my best to live a healthy lifestyle - eat right, drink right, and exerice! I prepared something healthy for lunch.

Ingredients:
Oyster Mushrooms


Mushroom buttons


Diced Tomatoes with roasted garlic


Eggplant: Quartered and sliced to half inch thick


Basil leaves:


Spinach Pasta:



PROCEDURE:
1. Fry eggplant in pan with two tablespoons of canola oil


2. Once eggplant become slightly translucent, incorporate the mushrooms. Let it cook for two to three minutes


3. Add the diced tomatoes with roasted garlic. Mix everything.


4. Put basil leaves. Season with salt & pepper.


And that's my lunch. You may top it with grated cheese of your choice. And you? Try it now na!
