Tomato Jam and Planet Green

I was elated when I opened my FACEBOOK Inbox and found two messages from a very good family friend of ours, Jan La'O. Let's call him JL (we have the same initials hekhek). JL sent me this link:

And interestingly, a TOMATO JAM Recipe which I'm so excited to try.

Tomato Jam

1-1/2 pounds good ripe tomatoes (Roma are best), cored and coarsely chopped
1 cup sugar
2 tablespoons freshly squeezed lime juice
1 tablespoon fresh grated or minced ginger
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 teaspoon salt
1 jalapeƱo or other hot pepper, stemmed, seeded and minced, or red pepper flakes or cayenne to taste

1. Combine all ingredients in a heavy medium saucepan, Bring to a boil over medium heat, stirring often.

2. Reduce heat and simmer, stirring occasionally, until mixture has consistency of thick jam, about 1 hour 15 minutes. Taste and adjust seasoning, then cool and refrigerate until ready to use.

Healthy and Guilt-Free Lunch!

Tuna-based Pasta!
Had this for lunch... YUM!
Ingredients:
One med size onion - sliced
3 cloves garlic - chopped
1 can diced tomatoes - drained
1 can century tuna light (of your choice)- drained
Olives (1 to 2 oz of black and green)
Mushrooms
Basil leaves
salt
pepper
cheese
1 tbsp olive oil
Procedure for the Sauce:
1. In a Pan, heat up olive oil then saute garlic and onion until garlic turns golden brown
2. Add mushrooms, olives, tuna and tomatoes. Saute for 5 mins.
3. Add basil leaves.
4. Salt, pepper to taste. Done!!!

Very Easy to cook, healthy and Guilt-Free! Try it!
